Trattoria Bellavista — the pizzaiolo

Eighteen years in Naples before Sydney. Giovanni grew up among flour sacks and the smell of sourdough in his family's trattoria near Piazza del Gesù. By 13, he was already kneading dough under his father's watchful eye. After eight years of apprenticeship, he worked at Sorbillo and at Taverna dell'Arte — two landmark addresses in Naples.

Certified by the Associazione Verace Pizza Napoletana in 2006, Giovanni honours every detail of the AVPN standard: Caputo 00 flour, slow fermentation between 48 and 72 hours, San Marzano tomatoes, buffalo mozzarella AOP, no shortcuts, not in the dough and not in the fire. That same discipline, he passes on at every service.

Arriving in Sydney in 2008, Giovanni found a light-filled space on Stanley Street, perfect for installing his Neapolitan wood-fired oven. Trattoria Bellavista opened that same year, with one obsession: to serve Sydney Neapolitan pizza exactly as it's made in Naples, without compromise, not in the dough, not in the generosity.
